Beer of the Week, August 3, 2021

  1. Ferrous Falcon – Bee & Bird Milkshake DIPA, 8.6%

    Kyle Harrop of HORUS Aged Ales has built a loyal following on the basis of his massive barrel-aged offerings. The tiny Oceanside operation has produced a bevy of stouts, barleywines and other malt-driven creations with stacks of adjuncts, used vessels from well-regarded whiskey distilleries and low bottling runs. With new side-brand Ferrous Falcon (derived from the Latin root, “ferrous” is an adjectival form of “iron” – think of the atomic symbol for that element, Fe), Kyle now turns his attention to hoppy beers. Based out of the San Marcos location of Mason Ale Works, this new project debuted barely six months ago and has released only a half-dozen beers so far. This contribution to our tenth-anniversary celebrations is a hazy double IPA hopped with El Dorado, Cascade and Enigma, furthermore dosed with honey and lactose. Bee & Bird is directly inspired by Crown & Crate, a recurring beer by Boston’s Trillium Brewing.

  2. Alesmith – Aleschmidt Oktoberfest Märzen, 5.5%

    It is the first week of August, so the Oktoberfest beers are beginning to drop! “Seasonal creep” is a real phenomenon, as the beer world has increasingly come to resemble the fashion world. Early out of the gate is local stalwarts Alesmith, with their annual amber lager. The white-and-blue Bavarian flag motif on the side of the can makes it instantly recognizable. Prost!

  3. Silva Brewing – Silva Stout 2021 Barrel-Aged Imperial Stout, 12.6%

    Chuck Silva is a household name in San Diego, as a former head brewer at Green Flash for over a decade. His eponymous Silva Stout was much sought-after, only glimpsed sporadically back in those days. A few years back, he moved with his spouse Mary Jo to the Central Coast of California, where he grew up. They set up shop in Paso Robles as a “retirement brewery”, producing a wide array of styles. Silva Stout returns under this new guise as a hefty stout aged for 18 months in Four Roses bourbon barrels.
